Last week I used my oven for the first time baking anything other than pizza. I really think there is hope for me, I used my oven again today!!
I baked some sugarfree gingerbread/spicy nuts/pepernoten (how do you call them in English?). I didn’t bother asking Mia to help me baking: no sugar? Mia is not in the taste…
– 1 yolk (eigeel)
– 100 ml melted coconutoil
– 200 gr dates (dadels)
– 2 ts wijnsteen tartar (wijnsteen) baking powder
– 200 gr wholemeal spelled flour (volkoren speltmeel)
– 1/2 ts vanilla essence
– 5 ts mixed spice (koekkruiden)
– 1 pinch of salt
! the dates (dadels) have to soak (wellen) for 4 hours !
Than you mix/blend them with the oil. Add all the other ingredients and put the mixture in the fridge for about 30 minutes.
Preheat the oven to 175 degrees.
Make small rolls (bolletjes), flatten them a little bit, and bake them for 30 minutes.
And this is the result. They are absolutely gorgeous. A little bit dry however so you should consider using more oil. Suprisingly Mia really really adores them too!!! (@#$%)
