Today I made a really healthy, creamy and easy broccoli soup. This soup is very flavorful because of the coconut milk and some straws of basil. It appeared to me as a weird combination but tasted great.
Ingredients (for 2 persons):
(glutenfree and vegan)
– 2 tbsp coconut oil
– 5 cloves garlic (chopped)
– 1 onion (chopped)
– 1 big head of broccoli
– 1/2 liter water
– 1 can of coconut milk (200 ml)
– 5 sprigs of fresh basil (takjes basilicum)
– pepper and salt
Fry the garlic and onion together with the coconutoil. When lightly browned add the broccoli and cover with water. Bring to a boil an then lower the heat. Let simmer for 20 minutes. Add coconut milk and basil to the soup and mix until smooth. Add salt and pepper if desired. I decorated mine with some pumpkin, sunflower and flax seeds.
